TKC Anniversary Giveaway
On February 20th there will be a great big birthday party–in my head. The Kim Challenge is turning 2-years old. My lil baby is growing up.
Since one doesn’t usually get presents for a blog-birthday, I figured I would give some out. Sadly, I don’t have enough to share with the class, so I’m going to have to do this giveaway style.
The giveaway is the Rockin’ Body collection, which consists of 2-DVDs that have 7 workouts and a booklet. I don’t think the booklet seems all that useful, but the DVDs are. The collection is new and covered in shiny plastic shrink wrap. Ooh, shrink wrap.
I’ll be drawing a winner on Monday, February 22nd, which gives you ample time to decide if you want a rockin’ body and enter.

Well I usually whore out my comfort foods with vegetables- for example I add pureed butternut squash to my mac and cheese, spinach and carrots to my meatloaf. I adore Cabot’s 75% reduced fat cheeses in comfort recipes, and I use whole wheat alternatives with the pasta and rice or breadcrumbs in the recipes. I usually play around with 0% fat greek yogurt and applesauce in baking recipes in lieu of creams or oil. And if there’s some need for a cream soup I’ll use the Health Valley or Amy’s brand versions since they’re slightly less horrible for you than Campbell’s. And extra lean ground turkey instead of beef unless that ruins the recipe. I just try to lessen the damage and add nutrition where possible.

lasgna with low fat ricotta and mozzarella vs. the high fat stuff, and morningstar crumbles instead of any kind of meat (I’m ok with no meat-like stuff in my lasagna, but this makes the family happy). Throwing in some finely diced zucchini into the sauce also ups the veggies without changing the taste/consistency.
Throwing a lot of cauliflower into mac n’cheese works pretty well too

I recently found your blog through Pink of Perfection and have been enjoying it- thanks! I think the best way to make comfort food healthier is to just eat it in limited quantities and as a treat (rather than an everyday thing), but besides that, I usually sub-in lower fat dairy (milk/cheese/cottage cheese) and use spices whenever possible to make sure the dishes are still flavorful.

Usually I try to use real food in place of processed foods. Down here in the Deep South comfort food usually involves Velveeta and/or Cream of Something soup. I use bechamel, and cut back on the salt. I don’t deep fry – instead i try to roast.

My comfort food is pasta. So, I use whole wheat pasta and then I will usually puree a vegetable or legume (like broccoli or chick peas) with some extra virgin olive oil, a little salt, and some pepper and it’s always so delicious. No need for cheese and a nice variation from the standard tomato sauce.
