I am on a mission. A mission to use all the foods I have in my fridge, pantry, and freezer. This may lead to some interesting food choices over the next few weeks. For now they remain moderately normal, but give me a week and we’ll start to see what kind of creative cookery this may lead to.
The reason for this little misadventure is twofold:
- I’ll be moving in a couple of months and the idea of packing up a bunch of cans of garbanzo beans, quinoa, and the mountain of organic popping corn I ordered from Amazon seems silly.
- The second is that I’m broke. Probably broker than I’ve ever been before. Considering the economic downturn I’m guessing quite a few of you have been here. I took some time off from my regularly scheduled freelancing to work on book stuff early this year, but in retrospect that was a bit of a mistake—I burned through my meager savings relatively quickly and also didn’t have those nifty little checks from the powers that be coming in to replenish what I was using. I’m back to writing about celebrities and squat thrusts, but the financial damage is done. As I try to dig my way out of the hole my ideology created I’ll have to pinch a few pennies.
I don’t think this episode in broke dieting is permanent, in fact, I’m relatively sure it will be over in a few weeks. In the meantime I am choosing to see this as an exercise in creative cookery. A project if you will—and we all know how much I love projects. I have a wee bit of fresh produce left, some stockpiles in the freezer, and a whole bunch of egg whites that I apparently buy in bulk. Throw in some bags of lentils and a bouillon cube and this may even end up being a high fiber affair.

Roast your own tomato sauce: I had some tomatoes that were starting to turn so I roasted them with a zucchini, onion, and mushrooms. Once they were done cooking I crushed the tomatoes and mixed in the rest of the vegetables, then I tossed it all with brown rice pasta and shrimp
Leftover turkey chili, brown rice, and lite sour cream
