I’ve made a very important decision about Fridays…they are for chocolate.

I came to this conclusion while taking a leisurely afternoon walk around Brooklyn and accidentally falling into a bakery and ordering a cupcake that was wearing a tiara.

Accidents happen.

I mean really, how can you not have to have this!  It’s the princess of all cupcakes and now it lives inside of me, and seeing as how you are what you eat, that officially means I AM THE PRINCESS OF ALL CUPCAKES.

I can tell you understand where I’m going with this.

Breakfast

My sugar craving started last night when I decided that I needed to eat a cinnamon bun.  Seeing as how I wasn’t exactly prepared to break out the yeast, flour, butter, sugar and whatnot, I decided to make overnight oatmeal that would quench my craving.

I soaked 1/2 a cup of oats in 2/3 a cup of unsweetened almond milk, 2 tsp brown sugar, and a dash of cinnamon overnight.  In the morning I heated up the mixture and added a tablespoon each of walnuts and chocolate chips.  I’m not sure why I don’t eat this for every meal.

Lunch

Chopped salad tastes good, but always looks disastrous. Lettuce, apple, blue cheese, dried cranberries, walnuts, grilled chicken, and oil & vinegar

Mid-afternoon indulgence

This is right about the time I became a princess.

Dinner

I had a friend over for dinner.  We have a symbiotic relationship: she doesn’t cook (when I first met her she didn’t even have the gas in her stove hooked up) and I am always looking for people to cook for.  I decided to try my hand at homemade tortillas.  This is all part of my resolution to make my own ‘processed’ foods this year.  FYI: Tortillas are super easy to make, there’s really no need to ever by store bought wraps.  I’ll be writing the recipe out for Monday’s post on my other blog.

Since tortillas on their own aren’t a complete meal, I decided to throw in a few other things:

Tortillas with (not so) refried beans; sauteed peppers, onions and mushrooms; avocado; salsa and jalapeño

After dinner my friend said, “Was this the healthiest Mexican food I’ve ever had.”

Probably.  I do what I can 😉

I also made homemade pickles for the first time tonight, but I won’t know how they turned out for another 10 days.

Not a bad way to end the week.  After all, I am royalty now.
