I very rarely blog on the weekends, but I’m working on being a bit more accountable about my eating habits. Translation: not eating eating a bunch of crap on the weekends. This weekend went pretty smoothly on the healthy eating front.
I was supposed to go home and spend Father’s Day with my folks but after my mini meltdown on Friday my parents graciously told me that they thought I should probably take this weekend to focus on work, and catching up on it. Which is exactly what I did. This weekend was super productive, I cleaned my house which was direly needed. I did laundry which I hadn’t done in almost a month! I caught up on a lot of work. I caught up on some personal projects I let go neglected. I even hit up a spin class!
I feel 9000% better. A weekend in seclusion, catching up on life was exactly what I needed. Thanks mom and dad for reigning in my crazy 😉 .
This weekend I discovered the beauty of oatmeal/egg white pancakes. I’m trying to cut back on sugar, so instead of syrup I heated up almond butter and poured that on top. Delish!
Oatmeal Protein Pancakes:
- 1/2 cup old-fashioned oatmeal
- 1/4 cup 1% cottage cheese
- 1/2 cup egg whites
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
Blend all ingredients together (I used my immersion blender), then cook ’em up like a regular pancake. For the ones above I added some frozen raspberries for some extra tang.
Calories: 270, Fat: 3 grams, Carbs: 31 grams, Protein: 27 grams
Chickpea and eggplant stew over brown rice
I made the pancakes again, only this time with banana.
I could only eat half this time, which was kind of disappointing because they’re so good!
Salad with lettuce, cucumber, banana peppers, black olives, grilled turkey breast, carrots, and lemon vinaigrette
Stir fry with broccoli, mushrooms, pepper, tofu and brown rice
