Shhh, don’t tell anyone, but sometimes I’m not a culinary genius. Okay, let’s face it, often times I am not a culinary genius, but I guess that’s part of the fun of cooking.
Tonight I made pumpkin ravioli (thanks for the recipe MaryLeigh!). I will admit that I was probably a bit too rough with these fragile lil suckers. In the end, they all kind of stuck together and became more of a pumpkin lasagna. Still really delicious, but not so much individual pillows of pumpkin-y goodness.
I cooked them in two batches, the one that I ate, and the one that I’m putting in the freezer. The second batch I took out one at a time and let cool individually, and wrapped them with a piece of waxed paper between each one. Hopefully the left overs will be more ravioli-like.
I still have pumpkin left I’m determined to use this week. Maybe to give it a whirl in oatmeal.
Now that one project is done with, I have a few more projects on my plate tonight including an exercise video and oodles of writing. If only I had Red Bull on tap.

I’ve decided to sub in white tea for coffee during the day. Not so much for health reasons, as that the only creamers available at my office are uber processed and I’d rather not spend my entire salary at Starbucks.
