After a long day of wine drinking, girl talk and coffee I needed to work up an appetite before I could even think about dinner.  I hit up the gym for a 7:30pm Spin class and by the time I got home it was almost 9pm!   If I were a normal person and bought groceries regularly I could have just whipped up something quickly, but since my food stores are dwindling rapidly I needed to resort to pantry items.  Lentils, my staple “I don’t have anything left to eat” meal it had to be.  They take a bit of time however, so I finally sat down to eat around 10:15.  But oh they were good.  I can’t help it I love legumes!
