I had lunch with my lovely friend Katie, who is one of those people that just knows what she wants and just goes out and gets it.  She’s a jewelery designer who has designed for tons of magazines, hosts an HSN show and has a book she’s optioning.  She just really inspires me to go after the things I want in life.  So, it was a fun lunch, full of idea sharing and good ole fashioned gossip.

Christine: Thank you for you comments, that’s such a great compliment.  I would never, ever,  promote a lifestyle that could be unhealthy.  My goal in any of my writing for Elastic Waist or here on The Kim Challenge has always been to promote living and eating and living a healthy lifestyle without going to extremes.

Well, I was out and about most of today, so I’m lumping lunch and dinner together in one post.  I realize that this week has been a bit boring in regard to my food choices.  It’s just that I made a lot of beans and a lot of rice and a lot of roasted vegetables and a lot of soup, and well that’s what I’m eating in varying combinations.  I promise to shake things up a bit more next week.  And next Thursday I’m off to Chicago to uhh cuddle, I mean sight see (yes, because people go to Chicago to sight see in -2 degree weather), and I will have oodles of interesting food confessions (mmm, hot dogs) to share with you then.  In the meantimes it’s beans and rice and soup and fruit, and that’s it.
