Wow, can  you believe it’s December ’08 already?  Man, time flies when you’re a grown up with real world responsibilities.  I’m still full from dinner last night.  I may try to take it easy on the eating today, at least until my normal hunger cues return.   While on Long Island this weekend I stocked up on some dry goods, groceries are just so much cheaper there, and I’ll be able to better spend my grocery allowance while I’m budgeting these next few months.  Becaues you know, 5lbs of whole wheat pasta should last me a while, I hope.

Amanda, here’s the recipe my mom used for her apple cake.  We conferred and decided it was too much apple, so we would suggest using 4 cups instead of 5 cups of chopped apple, but I’ve pasted it in it’s original form:

Apple Coffee Cake

5 C tart apples, cored, peeled, chopped
1 C sugar
1 C dark raisins
1/2 C pecans, chopped
1/4 C vegetable oil
2 tsp vanilla
1 egg, beaten
2-1/2 C sifted all-purpose flour
1-1/2 tsp baking soda
2 tsp ground cinnamon

1. Preheat oven to 350º F.
2. Lightly oil a 13x9x2-inch pan.
3. In a large mixing bowl, combine apples with sugar, raisins, and pecans; mix well. Let stand 30 minutes.
4. Stir in oil, vanilla, and egg. Sift together flour, soda, and cinnamon; stir into apple mixture about 1/3 at a time just enough to moisten dry ingredients.
5. Turn batter into pan. Bake 35 to 40 minutes. Cool cake slightly before serving.

Back to the food.  I will try to be better about writing/photographing those little nibbles that hit my lips during the course of the day so people no longer think I’m starving to death.  Although, the next couple of days may be a bit lighter on the eating front as I continue to digest my Thanksgiving meal.

I started out at the gym running for 45 minutes, then did some strength training and timing worked out that I finished that just as a spin class started, so I took a class for an hour.  More exercise than I was planning on, but not entirely a bad idea considering the amount of food I ate this weekend.
