Happy Monday! It’s looking like the apocalypse in my neck of the woods as crappy weather makes its way to New York, but I’m still in good spirits because I’m heading off for a much needed vacation at the end of the week! I’ll only be working three days this week which makes the fact that it’s Monday morning all the more tolerable. Although, today is insanely busy. I woke up at 5am to hit the gym and ran and did some ab work. My foot is still acting up, I should probably see a podiatrist at some point. During my lunch break I’ll be shooting some man on the street interviews; then when I get home the crew is coming over to shoot a Cooking with Kim and another episode of Pretty Imperfect. And, my roommate is moving out tonight and I’m showing the other room to a potential roommate. It’s a pretty jam packed day. I’m glad I got my exercise in early because something tells me as soon as everyone is out of my apartment I’m going to collapse.

Book club was fun and there was a ton of food. The chickpea salad I made will be this weeks ‘Destitution Diet’ blog on Elastic Waist, so keep your eyes out for the recipe on there. The clafouti I made turned out really well and my fellow book clubbers brought so much food! I took a picture, but there as more food to come, so this is only a sampling of what we had:

Salad with: lettuce, tomato, cucumber, diced peppers, avocado, beets and tuna

Tangerine
Radishes
