July is hot. I just wanted to make that statement.

I lied yesterday, said I was going to post dinner on the same day, but I got way too wrapped up in watching ‘Mad Men’ on DVD to think about the internet, well that and I was watching it on my computer, so multi tasking capabilities were hindered somewhat. I made mashed cauliflower last night. Whom ever thought of this is the most amazing person ever. It so easy, and it really is a great substitute for mashed potatoes. I just boiled the cauliflower, but it in a food processor with a dash of lite sour cream (but you can use butter or oil) and some garlic salt and voila. I read, in the handy-dandy reading materials that the blood bank guy gave me that foods high in vitamin C help with the absorption of iron. Cauliflower is high in vitamin C and then I made spinach which is high in iron. So hopefully I’m chocked full of important vitamins and minerals.

I’m supposed to meet up with friends tonight. So, who knows what dinner will end up being.
